~Wild Game Meals~ Cream of Mushroom Duck & Spicy Venison Strips

Cream of Mushroom Duck

  • 1 lb duck (4 or 5 breasts)
  • 1 cup sliced mushrooms
  • 1/2 cup of sliced carrots
  • 3/4 cup of diced onions
  • Salt and pepper to taste
  • 8 tablespoon butter
  • 1/2 cup flower
  • 2 minced fresh garlic clove
  • 3 cups of chicken broth
  • 1/2 cup of heavy cream

Prep your dish starting with a hot dutch oven. Throw down your carrots, onion, mushrooms, duck meat, and butter. Toss in garlic after a few minutes. Saute’ to your liking, salt and pepper to taste, then add your flour to the mix. Add chicken broth and heavy cream, continue stirring until thickened. Let it simmer for about 15 minutes, temp out at 165 degrees.

Spicy Venison Strips

  • 1/2 lb of venison
  • Tbsp of dried ancho chili flakes
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • Tbsp brown sugar
  • Salt and pepper to taste
  • olive oil

Cut venison hind steak in to strips of your liking, and prepare the dry ingredients in a gallon plastic bag. Mix your steak in the bag of seasonings thoroughly, and cook strips on an oiled saute’ pan for about 7-8 min, don’t overcook but cook throughout to temp. Let steak sit for about 1 min. Enjoy!
