~Restaurant Size Recipes~ Sloppy Joes & Taco Seasoning Meat Mix

Sloppy Joes

  • 20 pounds lean ground beef
  • 1 pound Italain sausage
  • 4 diced yellow or white onion
  • 6 diced bell pepper
  • 1 can petite diced tomatoes 100 oz
  • 2 cups brown sugar
  • 1 cup steak seasoning
  • 4/5 cup balsamic vinegar
  • 4/5 cup worcestershire sauce
  • 5 cups tomato paste
  • 2 tablespoon black pepper
  • 1 table spoon garlic powder
  • 3 tablespoon salt to taste
  • 1 tablespoon au jus base

 

Render the beef and sausage together but make sure not to over cook the meat, try to leave a little pink. After draining the excess grease continue on sauteing your diced peppers and onion with the meat. Once it reaches perfection add the brown sugar, balsamic vinegar, worcestershire sauce, au jus base, black pepper, and steak seasoning. Continue sauteing for a minute then add the tomato paste along with water until it thickens into a nice joe sauce. Finish it off with the garlic powder and salt to taste.

 

Taco Seasoning & Meat mix

  • 20 pounds lean ground beef
  • 1 pound Italian sausage
  • 4 diced onion
  • 6 diced bell pepper
  • roughly 32 oz salsa
  • 1 1/2 cup chili powder
  • 1 1/2 tablespoon garlic powder
  • 1 1/2 tablespoon onion powder
  • 2 tablespoon red pepper flake
  • 3 tablespoon oregano
  • 3 tablespoon paprika
  • 1/2 cup cumin
  • 6 tablespoon salt to taste
  • 4 tablespoon black pepper

 

Render the beef and sausage together but make sure not to over cook the meat, try to leave a little pink. After draining the excess grease continue on sauteing your diced peppers and onion with the meat. Add salsa and seasoning mix and saute while adding water until perfection! Remember, add salt to taste.
