Halibut Seafood Cakes

  • 48 oz halibut steak roughly
  • 1 can 16 oz crab meat
  • 3 bell peppers mixed (red, green, yellow) diced
  • 1 red onion diced
  • 2 cups Italian bread crumbs
  • 1 cup mayo
  • 2 rustic bread loafs (6 inch loafs roughly)
  • 1 tablespoon olive oil
  • 1 1/2 tablespoon kosher salt
  • 1/2 tablespoon black pepper
  • 1/2 tablespoon red pepper flake
  • 1 tablespoon Old Bay seafood seasoning
  • 1 tablespoon lemon pepper seasoning
  • 2 tablespoons dried dill
  • 1/2 tablespoon dry mustard
  • 1 or 2 eggs & liquid egg
  • 1 quart Japanese bread crumbs (panko)

Prepare your fresh ingredients beforehand and set aside. Cook halibut steaks in the oven and cool. Saute diced bell peppers and red onion with olive oil, kosher salt, and black pepper, set aside and cool down. Blend rustic bread loafs in a food processor until fine. Add halibut steak, crab meat, cooked peppers, onions, blended bread, Italian bread crumbs, mayo, and seasonings into a large bowl. Mix everything together by hand and add egg until wet to your liking. Get a dry bowl for your panko bread crumbs and another bowl for your liquid egg. Form 3 oz patties with your seafood cake mix, egg wash patties and toss in panko until evenly coated. Deep fry til golden brown and finish off in oven for a few minutes til perfection if necessary. Serve with tarter sauce or a proper aoili dip. Enjoy! 😉

Porketta Egg Rolls

  • Porketta meat shredded
  • chopped spinach
  • provolone cheese shredded
  • 48 oz cream cheese
  • 4 cups mayo
  • 3 cups artichoke hearts chopped
  • 6 bell peppers diced
  • 3 cups green onion chopped fine
  • 1 tablespoon kosher salt
  • 4 tablespoons garlic and herb seasoning
  • 1/4 cup lemon juice
  • 6 cups shredded mozzarella cheese
  • 1 cup asiago cheese snow
  • egg roll wraps
  •  Assuming you know how to make porketta roast and have some available- Porketta Recipe

Prepare your fresh ingredients beforehand and set aside. Take and mix together your cream cheese, mayo, lemon juice, peppers, green onion, artichoke hearts, cheeses, and seasonings into an artichoke dip. Wrap egg rolls around pork, provolone, spinach, and artichoke dip. Deep fry until golden brown and enjoy! 😀
